An Ode to Chinon

About this wine

Our Revelator Cabernet Franc, is a bright, savory, medium-bodied wine brimming with deep aromas of pepper, plum, blackberry, blueberry, cherry, lilac and violets, culminating into a mouthwatering finish that lingers. This wine compliments medium to sharp cheddar cheeses, roasted meats and vegetables, braised short ribs, grilled steaks, prime rib, filet mignon, lamb, hearty stews and the company of dear friends. Early morning handpicks of the Cabernet Franc where in late September of 2016, the fruit was de-stemmed and fermented in small tanks, with regular pump overs to aid extraction. In order to let the varietal fruit shine through, the wine was aged in French oak barrels with a light-medium toast for over 28-months. Erick Allen began his winemaking career in 1991, after a two-month long trip to France and to Italy. A love of Châteauneuf-du-Papes wines from the Rhône wine region in Southern France’s and Chianti wines from Tuscany framed his future. Upon Erick’s return he was telling a friend about his new found wine muse when she said, “if you love Rhône wines you should visit Paso Robles in California’s central coast where Rhône varietals thrive”. At that moment the die was cast.
