2017 Mandrake Cabernet Sauvignon
About this wine
Made from a single vineyard in the heart of the Paso Robles AVA, this wine was aged for 12 months sur-lie in a combination of stainless steel tank, French oak, and American oak barrels. It was bottled unfiltered and allowed an additional 24 months finishing in bottle before its release in December of 2020. The wine is dark, with an aromatic bouquet of black cherry, cassis, and sandalwood. The palate is rich and delicious, with notes of blackberry, plum, cigar box, and marzipan, and finishes with a hint of cocoa powder and clove. Because of the long cellar aging, you may find a layer of sediment under the cork, which is completely natural for smaller production wines that have not been filtered. Alex Katz and Josh Klapper have collaborated for more than a decade making wines on the Central Coast of California. After an initial focus on cool-climate Pinot Noir, Chardonnay and Syrah, they began working with Bordeaux varieties from Paso Robles in 2013.
