Ascension Cellars

2016 Mayhem Syrah

Bold & Spicy

About this wine

This deep-purple, inky, full-bodied Syrah was barrel fermented and hand racked for 18 months in French oak barrels, 50% new with a medium toast. The dark, rich, and deliciously intense fruit embodies the richness and full-bodied nose of violets, cured maple bacon, black raspberry jam, espresso, clove spice with hints of graphite and dark chocolate on the lengthy, elegant finish that will leave you wanting more. Mayhem Syrah is outstanding alone or as a companion for full-bodied cheeses, salmon, swordfish, roasted hen, turkey, grilled and smoked meats. Meet the Winemaker

Erick Allen

Winemaker

Ascension Cellars

Erick Allen began his winemaking career in 1991, after a two-month long trip to France and to Italy. A love of Châteauneuf-du-Papes wines from the Rhône wine region in Southern France’s and Chianti wines from Tuscany framed his future. Upon Erick’s return he was telling a friend about his new found wine muse when she said, “if you love Rhône wines you should visit Paso Robles in California’s central coast where Rhône varietals thrive”. At that moment the die was cast.
