Our Story

THE STORY: COLLABORATION: After working together on numerous wine projects, Winemaker Patric Matysiewski and Grapegrower Kaibab Sauvage formed a partnership in 2019 with the goal to create a new breed of estate winery, Sauvage Spectrum. Their first release, Sparklet is a lifestyle brand focused on fun, fruit forward, & affordable sparkling wines. Handcrafted, artisanal blends are grown with the intention to produce a modern sparkling wine. Nominal interference in the cellar highlights our premium high desert fruit. Unusual and rare blends allow us to exercise creativity showcasing the versatility of Colorado wines without being tied to tradition. Sauvage Spectrum is 100% Colorado estate grown and bottled. Our Owners are hands on and visible in the production of our grapes and wine everyday, in the vineyard and winery. GROWN HERE, BOTTLED HERE: Our vineyards are situated in the Grand Valley AVA, and the magical town of Palisade sitting at 4,728'. Grown with melted snow from the steep slopes of the Rocky Mountains, via irrigation from the Colorado River. The "million dollar breeze" blows through the high desert valley, developing thick skins on our grapes. The sunshine beats down on the valley floor, an ancient riverbed, radiating off the Bookcliffs and surrounding mesas. Warm days and cool nights allow our fruit to ripen but retain acidity for balance. Alluvium silt, sand, and clay loam soils with the addition of volcanic rock lend a unique minerality to our wines. Every year new grape varietals are planted for research and development, to further define the future of Colorado wine. We are not interested in mimicking wines of other regions. We are developing grapes with the intention to produce the true taste of Colorado wines. THE PALISADE VIGNERONS: WE GROW OUR WINES: Hand harvested, estate grown fruit from our sustainably farmed 60 acres of vineyard. We grow 26 varietals, researching and developing the land and vines to produce one of a kind nuanced wines for your enjoyment. Our team not only farms the land and grows the grapes, but also vinifies the wine with nominal interference in the cellar to truly express the unique high desert terroir. Our range of clean, ethically produced wines have little to no sulfite additions and are always gluten free, 100% vegan and non-GMO. If you have enjoyed Colorado wine before, you have most likely tasted our grapes. Now we present them to you as the Grape grower intended. Welcome to our domaine!

Meet the Team

Patric Matysiewski

Winemaker

In 2010 Patric Matysiewski began a career in fermentation. Hired on at Breckenridge Brewery originally to prep in the kitchen and wash dishes. Within a few months he was summoned to operate the canning line. From here on he excelled to bottling line operator and keg filler and washer. Learning the ins and outs of the cold side of brewing and cellaring.

Mid 2012 he was approached by the CEO of a popular urban winery to not only learn to make wine, but aid in the alternative packaging revolution of wine. It was here, his crossover from the brewing industry played a vital role in the development of his career.

Patric remained at IMT until early 2017. From there he exercised the Colorado Vintner’s Restaurant License in partnership with a restaurant group in Breckenridge, CO undertaking the ambitious project of designing, excavating, and installing an underground winery underneath one of the most iconic bars in the state. Again utilizing cross training gained from the brewing industry, wines are served from pressurized Bright Barrel Vessels directly to the taps in a dual concept restaurant / wine tasting room setting. This is the first system of its kind in the world.

Late 2018 a cider label was added to his company under the name Ten Mile Cider Co. Summit County’s first homegrown brand utilizing Colorado grown pome fruit.
